I am working at the moment of creating some ideas for my son to expand his eating repertoire. Like many kids on the spectrum he can sometimes be alittle rigid in what he eats (and that can also change). So I am exploring some different ways of preparing food that I know he likes in different ways to encourage him to make greater leaps of faith … well that is the theory. So for today I am trying to do a variation on the Chicken Nugget – Popcorn Chicken theme.
Home-made Chicken Bites
- 500grams Chicken Thigh Fillets Skinned – cut into bite sized portions (you could use different parts of the chicken including breast. I just prefer the thigh fillets)
- 1 cup Kellogg’s Corn Flakes Crumbs (you can use breadcrumbs if you prefer)
- 1 cup Whole Egg Mayonnaise
- Onion Salt (to taste)
- Preheat oven to 180C
- Line your baking dish/es with baking paper
- Coat your chicken pieces with mayonnaise. I found it easy to put the chicken in a large bowl and then pour the mayonnaise on top and mix together
- Place your Corn Flake Crumbs into a flat bottom bowl and season with Onion salt according to taste (I only like a small pinch)
- Roll the individual pieces in the Corn Flake Crumbs (your fingers will get messy) and lay on baking dish
- Once you have completed a baking dish, place it in your fridge for 20 minutes
- Bake for 20 minutes or until golden and cook (always check a piece to ensure that your chicken is cooked properly … i am just paranoid about cooking chicken)
- Remove from baking dish and place on kitchen paper for at least 1 minute to rest before serving
